🥩 Beef Fondant

A 45 Days Dry-Aged Tenderloin that has been slow-cooked in sous vide for 2.5 hours at 55°C, It is served on a bed of creamy mushroom stew, topped with shaving of black truffle and accompanied by fried sweet potatoes with truffle flavor and a truffle cream sauce.
